Roasted Cauliflower with Parmesan, Pine Nuts & Herbs

I’m always looking for ways to make vegetables feel like a real part of the meal, not something I tossed on the plate because I’m supposed to eat them. Here, cauliflower gets deeply roasted with turmeric, lemon zest, garlic and fresh herbs, then finished with Parmesan, toasted pine nuts and a squeeze of lemon.

I actually started developing this recipe as roasted cauliflower steaks. I cut the cauliflower into big, thick slices, arranged them carefully on the sheet pan and thought they looked very pretty.

They also required more than one sheet pan.

And at some point I had to ask myself: for what?

I wasn't trying to turn cauliflower into a steak. I wanted a really good roasted vegetable to serve alongside dinner. Cutting it into smaller, bite-size pieces made more sense, still browned beautifully using only one sheet pan, and made the whole thing easier to cook and eat.

And that's where I am in midlife... increasingly interested in the version of things that works well without making life unnecessarily complicated.

The flavor stayed exactly where I wanted it: garlic, fresh rosemary, thyme and oregano, a little turmeric and lemon zest, with Parmesan and a generous amount of pine nuts added toward the end so they get golden and toasty.

Why It's on My Midlife Table

I want vegetables to be something I genuinely look forward to eating, not just an obligatory green thing sitting next to the rest of dinner. Roasted cauliflower with Parmesan cheese, pine nuts and plenty of fresh herbs definitely qualifies. The olive oil and pine nuts add healthy fats, while Parmesan adds a smidge of protein and calcium.

And a little shoutout to the turmeric here. I originally added it because I love the beautiful golden color it gives the cauliflower, but turmeric contains curcumin, a plant compound that's been studied for its antioxidant and anti-inflammatory properties. I'm not pretending the ½ teaspoon in this recipe is medicine, but I'm always happy when something that makes food look and taste better brings a little something extra to the table, too.

Cook's Notes & Substitutions

  • Cauliflower size: The medium cauliflower I used weighed about 2 pounds before trimming and yielded about 1½ pounds of florets.
  • Keep the florets similar in size. They don’t have to be identical, but relatively even bite-size pieces will roast more evenly.
  • Don't have fresh herbs? In place of the fresh herbs, use ¼ teaspoon dried rosemary, ½ teaspoon dried thyme and ½ teaspoon dried oregano.
  • Watch the pine nuts. They can toast quickly at 450°F, so start checking them around the 3-minute mark.
  • A note about turmeric: Turmeric gives the cauliflower that beautiful golden color, but it can stain hands, clothing and some surfaces, so be careful when working with it.
  • Save the cauliflower core. Cut it into small pieces and freeze it for smoothies. It adds a little extra fiber and helps make them creamy without adding much flavor.

Ingredients

  • 1 medium head of cauliflower
  • 3 tablespoon extra-virgin olive oil
  • 2 cloves garlic, minced
  • ½ lemon, zested
  • ½ teaspoon ground turmeric
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • pinch red pepper flakes
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon fresh oregano, finely chopped
  • ⅓ cup pine nuts
  • ¼ cup Parmesan cheese, freshly grated
  • ¼ lemon, for finishing

Instructions

  • Preheat the oven to 450°F.
  • Cut the cauliflower into bite-size florets, keeping them similar in size so they roast evenly.
  • In a small bowl, whisk together the olive oil, garlic, lemon zest, turmeric, sea salt, black pepper and red pepper flakes.
  • Place the cauliflower in a large bowl. Pour the olive oil mixture over the cauliflower and toss thoroughly to coat, using your hands if needed. Add the rosemary, thyme and oregano and toss again.
  • Spread the cauliflower in a single layer on a large metal sheet pan. Roast for 15 minutes.
  • Toss the cauliflower and roast for another 7–8 minutes, until beginning to brown and nearly tender.
  • Sprinkle the Parmesan and pine nuts evenly over the cauliflower. Roast for another 3–4 minutes, until the cauliflower is tender and browned in spots, the Parmesan is melted and the pine nuts are lightly toasted.
  • Remove from the oven and squeeze the juice from ¼ lemon over the cauliflower. Serve warm.
