Pumpkin Greek Yogurt Bowl

Pumpkin spice latte season is here, and I’m all for it. I just don’t need everything pumpkin-spiced to come with tons of sugar anymore. This Pumpkin Greek Yogurt Bowl is deliberately less sweet, with spiced pumpkin purée, plain Greek yogurt, crunchy pecans, pepitas, coconut flakes, and just a little maple syrup. It has all those warm fall flavors I love, along with plenty of protein, fiber and healthy fats.

One thing I’ve noticed since cutting back on added sugar is that my taste for sweetness has changed. Things that once tasted normal to me can taste really sweet now. There are just 2 teaspoons of maple syrup in this entire pumpkin yogurt bowl: 1½ teaspoons mixed into the pumpkin purée and another ½ teaspoon drizzled over the top. To me, that’s plenty. I can still taste the pumpkin and warm spices, and the little bit of maple syrup adds just enough sweetness without turning breakfast into dessert.

When I first tested this recipe, I used 3 tablespoons of chopped pecans and 2 tablespoons of coconut flakes. Mostly because I love all that crunch. I tested it again with 2 tablespoons of pecans and 1 tablespoon of coconut and liked it just as much, so I made those the amounts in the recipe. But sometimes I’ll still add more. The extra pecans and coconut bump up the fiber and add a little more protein. They also add more calories.

And that’s a pretty good example of how I think about food these days. I’m not particularly interested in counting calories. I’m much more interested in getting enough protein and fiber, keeping added sugar reasonable, including healthy fats, and eating food that actually satisfies me. It’s a big part of what I mean when I talk about eating in a midlife-friendly way.

One last thing: you’ll have pumpkin left in the can. Don’t let it sit in the refrigerator until you discover it a week later and have to throw it away. If you're not making this for breakfast again tomorrow, portion the extra pumpkin purée and freeze it. That’s what I do with mine, and coming soon is a pumpkin smoothie that will put those frozen leftovers to good use.

This is exactly the kind of breakfast I want in my 50s: plenty of protein and fiber, healthy fats, and just enough added sugar from a natural source to make it taste good. The Greek yogurt gives it a substantial protein base, while the pumpkin, pecans, pepitas and coconut bring fiber, crunch and not-hungry-in-20-minutes staying power. And because it takes about five minutes to make, it proves that a nourishing breakfast doesn’t have to be complicated or boring.

Cook's Notes & Substitutions

  • Thick or loose pumpkin purée both work. I tested this pumpkin yogurt bowl with two different organic pumpkin purées: one noticeably thicker and one looser. I typically prefer a thicker purée, but both tasted great here, so use whichever you have.
  • No pumpkin pie spice? Use ¼ teaspoon cinnamon and ⅛ teaspoon ground nutmeg instead. Regular cinnamon or Ceylon cinnamon will work; I prefer the softer, slightly more delicate flavor of Ceylon cinnamon.
  • Want more crunch and fiber? Increase the pecans to 3 tablespoons and the coconut flakes to 2 tablespoons. It bumps the fiber from about 7 grams to about 9 grams per bowl, along with a little more protein.
  • Choose unsweetened, unsulphured coconut flakes. I buy coconut flakes that are both unsweetened and unsulphured to avoid unnecessary added sugar and preservatives.
  • Save the leftover pumpkin. Portion the remaining purée and freeze it for smoothies.

Ingredients

  • 1 cup whole plain Greek yogurt
  • ½ cup organic pumpkin purée
  • 2 teaspoon pure maple syrup, divide
  • ½ teaspoon pumpkin pie spice
  • 2 tablespoon chopped pecans

Instructions

  • In a small bowl, stir together the pumpkin purée, 1½ teaspoons maple syrup and pumpkin pie spice until well combined.
  • Spoon the Greek yogurt into a serving bowl or jar.
  • Spoon the pumpkin mixture over the Greek yogurt.
  • Top with the pecans, pepitas and coconut flakes.
  • Drizzle the remaining ½ teaspoon maple syrup over the top and serve.
