Greek Yogurt Berry Chia Parfait

This is a breakfast I've been coming back to again and again. Simple, lightly sweet, and easy to feel good about.

Some mornings I make this fresh. Other mornings, it’s already in the fridge, waiting for me.
This chia berry Greek yogurt parfait starts with a simple base of Greek yogurt, stirred with chia and flax for a little more substance. From there, it’s layered with berries and a bit of crunch from sliced almonds. You can keep it quick, or let it sit and soften into something closer to a pudding.
The berries bring a natural sweetness and brightness, while the yogurt and seeds give it enough staying power to feel like a real breakfast. Not heavy. Not overly complicated. Just something that works.

Why It's on My Midlife Table
Breakfast used to be either too sweet or something I skipped altogether. This parfait has become my happy middle ground. It's naturally sweet from the berries and a bit more so with a drizzle of honey when my sweet tooth begs for more. More importantly, it's satisfying enough to keep me full and simple enough that I'm much more likely to actually make it.
I also love how flexible it is. Some mornings I make it while I'm getting ready and let it thicken for a few minutes. Other times I stir it together the night before so breakfast is waiting for me in the refrigerator.
It's one of those simple morning meals that makes nourishing myself feel easy instead of complicated.

- Berries: Blueberries and blackberries are my go-to, but raspberries or strawberries work just as well

Ingredients
- 1 cup plain Greek yogurt, unsweetened
- 1 tablespoon chia seeds (ground or whole)
- 1 tablespoon ground flaxseed
- ½ cup mixed fresh berries
- 2 tablespoon sliced almonds
- 1 teaspoon honey (optional)
Instructions
Quick Method (ground chia)
- Stir the yogurt with ground chia and flaxseed until combined.
- Let sit for about 5–10 minutes to thicken.
- Top with berries, sliced almonds, and honey, if using.
Short Soak Method (whole chia)
- Stir the yogurt with whole chia seeds and flaxseed until combined.
- Let sit for 20 to 30 minutes at room temperature or in the fridge, then stir again.
- Top with berries, sliced almonds, and honey, if using.
Overnight Method (whole chia)
- Stir the yogurt with whole chia seeds and flaxseed until combined.
- Cover and refrigerate overnight, or at least 8 hours.
- Top with berries, sliced almonds, and honey, if using.
