These Miso Marinated Steak Tips with Garlic & Herbs have officially made it into our grilling rotation this summer. They’re easy, really flavorful, and one of those dinners that feels a little more special than the amount of work involved would suggest. And because steak tips cook so quickly, they’re just as doable on a weeknight as they are for a weekend dinner.
One of the things I love most about this recipe is that most of the work happens earlier in the day. You can get the steak into the marinade in the morning before you leave for work or school drop-off, and when you get home later, dinner is already halfway there. The steak gets at least a couple of hours to soak up all that flavor (even longer is great), and all that’s left to do is cook it and pull together a side or two.
At our house, grilling usually means my husband takes over because, you know, “Me man! Me grill!” Never mind that I actually love grilling, too. But if someone else wants to handle dinner while I make the sides, or put my feet up for 10 minutes, I’m certainly not going to argue.
A little note from experience: You might want to throw on a dark apron for this one. Turmeric is not forgiving when it comes to stains.
Why It's on My Midlife Table
One of the things I’ve learned about eating differently in midlife is that I don’t have to make every meal look like the picture of “healthy eating” that I used to have in my head. There’s room (lots of room) on my table for steak, especially when I pair it with vegetables, a big salad or a hearty whole grain. Steak provides plenty of protein, and I love that this marinade lets me work in a few ingredients I’m always happy to add where I can. Miso is a fermented food I like including for gut health, while turmeric contains curcumin, a plant compound studied for its antioxidant and anti-inflammatory effects.

Cook's Notes & Substitutions
- Give it time to marinate: Two hours is the minimum but longer is even better. You can marinate the steak for up to overnight.
- No miso? Substitute 2 teaspoons tamari or soy sauce. Since both are saltier than miso, omit the added sea salt from the marinade and adjust to taste.
- Try roasted garlic: If you have a little extra time, roast the garlic first for a mellower, slightly sweeter flavor, then mash it into the marinade.
- Choose your cooking method: Grill, broil or pan-sear the steak tips depending on what’s easiest. If pan-searing, work in batches so the steak has enough room to brown rather than steam.
- Let it rest: Give the steak tips about 5 minutes to rest after cooking before serving.

Miso Marinated Steak Tips with Garlic & Herbs

Ingredients
- 1¼–1½ lbs steak tips
- 3 tablespoon extra virgin olive oil
- 1 tablespoon white or yellow miso paste
- 2 tablespoon fresh lemon juice
- 1 tablespoon balsamic vinegar
- ½ tablespoon nutritional yeast
- ½ tablespoon honey
- 2 cloves fresh garlic, finely minced
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- ½ teaspoon ground turmeric
- ¼ teaspoon freshly ground black pepper
- ½ teaspoon smoked paprika
- ½ teaspoon coarse sea salt
Instructions
- Trim any excess fat from the steak tips and cut into roughly 1 to 1½-inch pieces for even cooking.
- In a medium bowl, whisk together the olive oil, miso paste, lemon juice, balsamic vinegar, nutritional yeast, honey, garlic, rosemary, thyme, turmeric, black pepper, smoked paprika, and sea salt until well combined.
- Place the steak tips in a resealable bag or glass dish. Pour the marinade over the steak and toss to coat evenly.
- Cover or seal and refrigerate for at least 2 hours or up to overnight.
- If using skewers, thread the marinated steak tips onto the skewers, leaving a little space between each piece for even cooking.
- Cook the steak tips using your preferred method:Grill: Preheat the grill to medium-high heat. Grill for about 3 to 4 minutes per side, or until cooked to your desired doneness.Broil: Preheat the broiler to high and position the steak about 4 inches below the heating element. Broil for about 4 minutes per side, or until cooked to your desired doneness.Pan-sear: Heat a cast-iron skillet over medium-high heat. Cook the steak tips in batches for about 3 to 4 minutes per side, or until cooked to your desired doneness.
- Remove the steak tips from the heat and let rest for 5 minutes before serving.
