Caramelized Sweet Potatoes with Cottage Cheese
October 16, 2026 | Serves 2 | Prep 5 min | Total 1 hr
These caramelized sweet potatoes started with one of those viral recipes I kept seeing online: sweet potatoes roasted cut-side down until tender, browned and lightly caramelized underneath. I loved the idea but wanted to turn them into more of a meal. Most likely lunch.

I know I’m not the only one who’s seen those caramelized sweet potato videos all over social media. They always look ridiculously good.
The basic idea is simple: cut sweet potatoes in half, season and coat with olive oil, then roast them cut-side down until they’re soft inside and beautifully browned and caramelized underneath. Cottage cheese was an easy choice for adding a meat-free source of protein. I topped that with toasted pine nuts for a little crunch and healthy fats, and microgreens for something fresh and nutrient-packed. Suddenly, a baked sweet potato feels a lot more like a meal.
But hold your horses, because here are a few things I learned after making these viral sweet potatoes a few times. Don't get too hung up on achieving that perfectly gooey, caramelized surface you may have seen online. Sometimes mine get more caramelized than others, too. Roasting them cut-side down directly on an aluminum sheet pan (i.e., skip the parchment paper) gives me the best results. But even when they're more browned than caramelized, they come out tender, sweet and delicious.
Why It's on My Midlife Table
Sweet potatoes bring fiber and complex carbohydrates to the plate, while cottage cheese adds protein and calcium. Pine nuts and extra-virgin olive oil add healthy fats, and keeping the skin on gives you even more of that sweet potato fiber.
Adding the toppings turn what I’d normally consider a side dish into an easy meatless lunch or light dinner. Also, if you want a little more protein, adding an egg on top would be delicious, and I'm probably doing that next time. If you'd prefer these as a side for dinner, they would be delicious alongside my Miso Marinated Steak Tips.

- Pine nuts
- Microgreens
- Flat aluminum sheet pan

Cook's Notes & Substitutions
- Sweet potatoes: I use medium sweet potatoes for this recipe. If you prefer a larger sweet potato, go for it. Just keep in mind that it may need a little extra time in the oven. Leave the skin on for the fiber but give them a good scrub before cooking.
- Getting that caramelized surface: Roast the sweet potatoes cut-side down directly on a flat aluminum sheet pan rather than parchment, but don't worry if yours don't get quite as deeply caramelized as some of the versions you may have seen online. I've made these several times, and the amount of caramelization varies from potato to potato. As long as they're tender and nicely browned, they're still so good.
- Kosher salt: Sodium levels can vary significantly between brands of kosher salt, so adjust the amount to taste. Keep in mind that cottage cheese also contains sodium, and amounts vary by brand.
- Cottage cheese: I use ½ cup per serving, which makes this substantial enough to work as a meal rather than just a side. Add more or less per your preference.
- Pine nuts: I started adding them to the sheet pan during the last five minutes of roasting for an easy way to toast them. Toasting isn't necessary, but it adds a little more flavor. Keep an eye on them because pine nuts can brown quickly, but I've never had an issue with this in the final five minutes of roasting.
- Microgreens: Use whatever variety you like or can find. Broccoli microgreens or a mixed variety are my favorites. They add freshness, color and an extra little boost of nutrients.
- For more protein: Add a fried or poached egg on top, or simply add more cottage cheese.
- Servings & leftovers: This recipe makes two servings, with one sweet potato per serving. If you're cooking for one, save the second potato for lunch the next day and reheat it in the oven or toaster oven before adding the toppings. You can halve the recipe, but if you're turning on the oven anyway, I think it makes sense to roast at least two. You can also easily add a few more potatoes to the pan for extra servings.

Caramelized Sweet Potatoes with Cottage Cheese

Ingredients
- 2 medium sweet potatoes, scrubbed and dried
- 1 tablespoon extra-virgin olive oil, plus a little more for the pan
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 1 cup cottage cheese
- 2 tablespoon pine nuts
- Microgreens, for topping
Instructions
- Preheat the oven to 375°F. Lightly coat a flat, unlined aluminum sheet pan with a thin layer of olive oil where the sweet potatoes will sit.
- Cut the sweet potatoes in half lengthwise, leaving the skin on.
- In a large bowl, coat the sweet potato halves with the olive oil, smoked paprika, garlic powder, salt and black pepper, making sure the cut sides are well coated.
- Place the sweet potatoes cut-side down on the prepared baking sheet. Roast for 40–45 minutes, or until tender.
- During the last 5 minutes of roasting, add the pine nuts to an open area of the baking sheet. Toast until lightly golden, keeping an eye on them so they don't burn.
- Remove the pan from the oven and let the sweet potatoes rest cut-side down on the pan for 10 minutes. Carefully flip them over.
- Top each serving with ½ cup cottage cheese, toasted pine nuts and microgreens. Add additional black pepper, if desired.
